This Baked Oats Recipe Is Like Having Cake For Breakfast

Baked feta pasta (and all the glorious variations of it) has your dinner covered for basically ever, but what about breakfast? TikTok has struck again with another instantly-viral food: baked oats.

Baked oats are a clutch breakfast for a lot of reasons. Oats are affordable—and a staple ingredient in many pantries. Second, they’re a good source of both fiber and protein, which will ensure that you’re energized enough for your a.m. Zoom calls and everything else on your morning to-do list. And baking your oats is a great way to change up the flavor and texture of your standard bowl of oatmeal—which you may or may not be sick of at this point in the season.

If you’re looking for a specific baked oats recipe to try out this trend, Feel Good Foodie blogger Yumna Jawad has a single-serving recipe that’s practically fool-proof. Here’s what you need to make it: rolled oats, one egg (or a flaxseed egg, if you’re vegan), peanut butter, maple syrup, baking powder, vanilla extract, salt, and cooking spray. Talk about making use of your pantry staples, right?

Jawad says the rolled oats are essential to nailing the light, cake-like feel of the dish, which is baked and served in an eight-inch ramekin or other small oven-safe vessel. “The novelty of the recipe is in the texture because we normally think of oats in their whole form,” she says. “Getting that texture comes down to basically turning rolled oats into oat flour in a blender. While you can make the recipe egg-free, I also find that the eggs provide structure when mixed with the oat flour that makes it cake-like.”

Besides adding your ingredients to the blender, all you have to do is bake the batter in the oven for about 20 minutes. That’s literally it. Jawad does offer up this insider cooking tip though: ” I recommend greasing the pan, mug, or ramekin before adding the batter to it. This helps to ensure a clean release after baking.” Dishes that require a rough scrub-down can definitely be a buzzkill.

Another reason this recipe is so great is that you can switch it up, varying the ingredients based on what you want to add. “There are countless ways to bring in different flavor profiles with chocolate, berries, sprinkles, and nut butters,” Jawad says. Simply add them to the blender along with the base ingredients. Baked oats recipe

Serves 1

Ingredients
1/2 cup rolled oats or quick oats
1 ripe banana
1 egg
1 Tbsp peanut butter
1 Tbsp maple syrup
1 tsp baking powder
1/2 tsp vanilla extract
Pinch salt
Cooking spray

1. Preheat the oven to 350°F. Grease a ramekin or oven-safe pan with cooking spray.

2. In a blender combine all the ingredients until smooth and well-blended, about one minute.

3. Transfer the batter into the prepared ramekin. Bake for 18 to 20 minutes, until a cake tester inserted in the center comes out with just a couple of crumbs. Allow it to cool in the pan for 10 minutes before serving and frosting.
