If you really want to cut down on food waste at home—something everyone following along with Well+Good’s 2022 ReNew Year program is committed to doing—it helps to know a few good “refrigerator cleanout” meals. These are the type of meals that don’t require sticking to a recipe 100 percent, allowing plenty of room to eliminate or add in ingredients, depending on what you have on hand that day.

Stews and soups are great for this. You can throw any veggies and protein sources you have into a big pot and it can all cook together with the broth. Breakfasts, however, are a little bit tricker. After all, not every veggie in your crisper is going to taste good in oatmeal or on pancakes. But there is a breakfast dish that is actually perfect for incorporating whatever you happen to have: scrambled eggs.

The beauty of scrambled eggs is that basically any veggie tastes great with ’em. This is also the perfect way to add fiber to your morning meal. To really take my scrambled eggs to the next level, I like to incorporate a homemade green goddess sauce. ReNew Year champs already know that I have a bottle of this in my fridge at all times. It’s made with vibrant ingredients like cilantro, parsley, lemon juice, cumin, and coriander. This makes whatever you top it with taste fresh—including produce on the verge of death.

Another perk of green goddess scrambled eggs? It comes together in mere minutes. If your mornings are as busy as mine, that’s key. Whip up this dish and you’ll have a meal that will energize you for your day and you’ll have done something to help cut down on food waste in the process by incorporating produce that’s on its last legs. All of that before some people have even gotten out of bed! How’s that for starting the day out right?

Green goddess scrambled eggs recipe

Ingredients:
1 Tbsp olive oil or avocado oil
1 cup baby spinach, washed
Kosher salt
Freshly ground black pepper
3 organic eggs (or plant-based egg substitute)
Any other vegetables you want to incorporate, chopped
3 Tbsp green chickpea goddess sauce

1. Heat the oil in a 12-inch skillet over medium-low heat. Add spinach, salt, pepper, and any other vegetables you want to add. Cook by tossing occasionally, until the vegetables are soft and spinach is wilted. Transfer the spinach to a plate, and wipe out the skillet.

2. Whisk the eggs. Add the egg mixture and cook, stirring slowly but constantly with a silicone spatula, until the eggs are barely set, one to two minutes. Add the veggies and spinach, gently folding it into the eggs until they are softly set, one to two minutes. Remove from the heat, gently fold in the green chickpea goddess sauce and serve.
